Norwegian Meat Salad Recipe

Ingredients

  • 1 c Julienne strips of cooked beef, veal, or lamb
  • 1 c Julienne strips of baked or boiled ham
  • 1 tb Minced onion
  • 6 tb salad oil
  • 2 tb cider vinegar
  • 1/2 ts pepper
  • 1 t minced parsley
  • 1/4 c heavy cream or sour cream
  • 1 Hard boiled egg, sliced
  • 1 Boiled or pickled beet, sliced

Directions

  1. Mix cut meats with onion.  Beat together oil, vinegar, pepper and parsley. Stir cream into dressing.  Mix with meats combining lightly.  Garnish with sliced egg and beet.

Served as a main dish salad.

Barbecued Roast Beef Sandwich Recipe

Ingredients

Barbecue Sauce

  • 1/2 cup ketchup
  • 3 tablespoons white vinegar
  • 2 tablespoons chopped onion
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons packed brown sugar
  • 1/4 teaspoon ground mustard
  • 1 clove garlic, finely chopped

Sandwiches

  • 1 lb thinly sliced cooked roast beef, cut into 1-inch strips (3 cups)
  • 6 burger buns, split

Directions

  1. In 1-quart saucepan, heat all sauce ingredients to boiling over medium heat, stirring constantly; reduce heat. Simmer uncovered 10 minutes, stirring occasionally.
  2. Stir beef into sauce. Cover and simmer about 5 minutes or until beef is hot. Fill buns with beef mixture.

Slow Cooker Sloppy Joes Recipe

Everyone loves Sloppy Joes and this comfort food can be ready when you are if you put it in the slow cooker to start off your day.

Ingredients

  • 3 pounds ground beef
  • 2 tablespoons shortening
  • 1 cup onion — chopped
  • 1 cup celery — diced
  • 1 green pepper — chopped
  • 1 garlic clove — minced
  • 2 tablespoons Worcestershire sauce
  • 1 cup ketchup
  • 3 beef bouillon cubes — crushed
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 can tomato paste — 6 0z.
  • 1 1/4  cups water
  • 3 tablespoons vinegar
  • 3 teaspoons brown sugar
  • 1 teaspoon dry mustard

Directions

  1. Heat shortening in skillet and brown meat, discard fat. Combine all ingredients in removable liner, stirring well. Place liner in base. Cover and cook on low 6-8 hours; or high 3-4 hours
  2. Serve over  warmed burger buns or noodles.

Nordic Cucumber Salad Recipe

Whenever possible, use in-season produce to up the flavour ante in this creamy, crunchy cucumber salad.  It’s a perfect salad for warm evenings all summer long.

  • 1/2 cup sour cream
  • 2 tbsp chopped fresh dill
  • 1 tbsp white vinegar
  • 1/4 tsp salt
  • 1 English cucumber, thinly sliced diagonally

Directions

  1. Stir sour cream with dill, vinegar and salt in a medium bowl. Season with fresh pepper.
  2. Add cucumber and stir until coated. Serve immediately.

Grilled Corn Salad Recipe

Ingredients

  • 6 cobs of corn, grilled
  • 1/2 cup diced red onion
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 3 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 cup chopped basil

Directions

  1. Preheat the grill to medium.  Remove the outer layers of the corn husks and then soak the whole cob in water for about 30 minutes.  Peel back remaining husks and remove hair.  Brush the kernels with olive oil; then pull husks back over the ear.   Place the cobs on the grill and cook for about 15 minutes.  
  2. Once the cobs have cooled, cut kernels off the cob.
  3. Add tomatoes, onion and basil to corn.
  4. Combine oil, vinegar, sugar, salt and pepper; mix well.  
  5. Stir the dressing into the corn salad and serve.

Potato Salad Recipe

Ingredients:

  • 6 medium sized red potatoes
  • 3 -4 hard boiled eggs
  • 2 Tbsp finely chopped onion, green onion or chives
  • 3 pickles
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 Tbsp vinegar
  • 2 Tbsp pickle juice
  • 3/4 tsp. salt
  • 1/2 tsp pepper

Directions

  1. Cook potatoes with a little salt until just done (approx 25 min). Easy to peel while still warm. (I like to keep some with the peel on for color) Boil eggs about 8 – 10 minutes. Allow potatoes and eggs to cool completely. Cube potatoes and eggs (use egg slicer for eggs), and slice pickles.
  2. Mix dressing ingredients and pour on potatoes etc.
  3. Mix the dressing according to taste. Decorate with sprinkled paprika and parsley.
