Mexican Smash Potatoes Recipe

Ingredients

  • 7 small potatoes
  • 1/2 pound ground beef, fried
  • salt
  • pepper
  • taco seasoning
  • cumin
  • 2 tablespoons butter, melted
  • 1 large Roma tomato, diced small
  • 1 green onion, diced fine
  • 1/2 fresh jalapeno, diced fine
  • 1 1/4 cups grated cheddar cheese
  • sour cream
  • salsa

Directions

  1. Boil potatoes until fork tender. Do not allow to get mushy.
  2. Drain and place potatoes on a baking sheet or in a cast iron fry pan that has been sprayed with none stick spray.
  3. While the potatoes are still hot smash them with a potato masher. (see photo below)
  4. Drizzle potatoes with melted butter and lightly season with salt, pepper, taco seasoning and cumin. ** you can let them sit at this point till you are ready to bake and assemble**
  5. Place oven rack in middle of oven and turn oven to broil. Broil seasoned potatoes until they get a nice crust on them but are not dark. 
  6. Remove from oven. Top with fried and seasoned (use any of the seasonings suggested in the ingredients to your liking) ground beef, tomatoes, onions and jalapenos. Top with cheese.
  7. Once again place under the broiler until the cheese is nicely melted and bubbly. 
  8. Serve with sour cream and salsa.

Recipe to feed two, but if you have more people just add more potatoes and toppings.

Deep-Dish Taco Square Recipe

Ingredients

  • 1/2 lb lean (at least 80%) ground beef
  • 1/4 cup chopped onion (1 small)
  • 2 tablespoons taco seasoning mix (from 1-oz package)
  • 1 cup Original Bisquick mix
  • 1/4 cup cold water
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise or salad dressing
  • 1/2 cup shredded sharp Cheddar cheese (2 oz)
  • 1 medium tomato, chopped (3/4 cup)
  • 1 can (4.5 oz) chopped green chiles

Directions

  1. Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 8-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix until blended.
  2. In medium bowl, stir Bisquick mix and water until soft dough forms. Using fingers dipped in Bisquick mix, pat dough in bottom and 1/2 inch up sides of baking dish.
  3. In same bowl, mix sour cream, mayonnaise and cheese until blended. Layer beef mixture, tomato and chiles over dough; spoon sour cream mixture over top.
  4. Bake 25 to 30 minutes or until edges of dough are light golden brown.

Taco Lasagna

Here is a recipe that is a perfect mid week night dinner. Quick and easy while you are rushing off to the next soccer game or music lesson.
It comes together quickly. Can be assembled ahead of time and baked when needed.

Ingredients

  • 1 package of 6″ soft tortilla (8 in a package)
  • 2 pounds of lean ground beef or chicken / turkey
  • 1 onion, diced
  • 1 green pepper, chopped
  • 1 – 19 ounce / 540 ml can of black beans, drained and rinsed
  • 2 cups frozen corn
  • 1 jar (about 2 cups) of medium salsa
  • 4 tablespoons taco seasoning mix
  • 1 cup water
  • 1/2 cup of sour cream or Greek yogurt (I used 1/4 cup of each)
  • 2 cups low fat shredded Mozzarella, Cheddar Cheese or a combination of both (whatever kind you have on hand)

Directions

  1. Brown the beef with the onion and green pepper drain the fat if needed.
  2. Add the taco seasoning, water, beans, corn and salsa.
  3. Simmer for 10-15 minutes.
  4. In a 9 x 13 inch pan layer a bit of salsa, tortilla shells, sour cream mixture, cheese, beef, and continue with repeating the layers. It should give 4 layers.
  5. Top with the final amount of cheese.
  6. Bake in 350 oven for 20-30 minutes and all the cheese is bubbly and melted.
  7. Let stand for 10 minutes before cutting into it.
  8. Serve with a fresh crisp salad.

Diablo Sauce Recipe (Chi-Chi’s)

Ingredients

  • 1lb ground pork
  • 23cup chopped white onion
  • 1(4 ounce) can diced green chilies, with juice
  • 10tablespoons la victoria green chili salsa
  • jalapeno (x-tra hot)
  • 3cups water
  • 1(1 1/4 ounce) package Ortega taco seasoning (Hot & Spicey)
  • 2tablespoons cumin
  • 12teaspoon salt
  • 2 tablespoons cornstarch
  • 14cup water

Directions

  1. Brown ground pork, onions.
  2. Add diced chilis, La Victoria salsa.
  3. Add 3 cups water.
  4. Add Ortega taco seasoning.
  5. Add 1/2 tsp salt.
  6. add 2 tbsp cumin.
  7. combine 2 tbsp corn starch and 1/4 cup water and add too sauce.
  8. continue to simmer till thickened.
