Sausage Snack Wraps Recipe

Ingredients

  • 2 cans (8 oz each) refrigerated crescent dinner rolls
  • 48 fully cooked small smoked sausage links
  • Ketchup, if desired
  • Prepared horseradish, if desired
  • Yellow mustard, if desired

Directions

  1. Heat oven to 375°F.
  2. Separate dough into 16 triangles. Cut each triangle into thirds lengthwise. Place sausage on shortest side of each triangle. Roll up, starting at shortest side of triangle and rolling to opposite point. On ungreased cookie sheet, place rolls point side down.
  3. Bake 12 to 15 minutes or until golden brown. Serve warm with ketchup, horseradish and mustard.

Horseradish Mayonnaise Recipe

Ingredients

  • 1 (5-inch) piece of horseradish root (use about 4 big tablespoons, grated)
  • 1 cup of your favorite mayonnaise
  • Juice of 1/4 lemon
  • Dash hot sauce like Frank’s Hot Sauce
  • Pinch sea salt
  • 1 teaspoon prepared horseradish

Directions

  1. Use a vegetable peeler or a knife to peel the surface skin off of the horseradish. Using a microplane grater, grate up about 4 hefty tablespoons of the stuff.
  2. Add to your mayonnaise and add the lemon juice, hot sauce, salt and prepared horseradish.
  3. Cover, and let rest in the refrigerator until ready to use.

Horseradish Potato Gratin Recipe

This preparation of au gratin potatoes changes out cheese in favor of spicy horseradish.

Ingredients

  • unsalted butter for the baking dish, at room temperature
  • 3 cups heavy cream
  • ¼ cup prepared horseradish
  • ¼ teaspoon ground nutmeg
  • kosher salt and black pepper
  • 3 pounds russet potatoes (about 6), peeled and thinly sliced

Directions

  1. Heat oven to 375° F. Butter a shallow 3-quart baking dish. In a large bowl, combine the cream, horseradish, nutmeg, 1½ teaspoons salt, and ¾ teaspoon pepper. Add the potatoes and toss to coat.
  2. Transfer the potato mixture to the prepared baking dish, pressing gently to submerge the potatoes. Cover the dish with foil, place on a rimmed baking sheet, and bake for 25 minutes. Remove the foil and bake until the potatoes are tender and the top is golden, 50 to 65 minutes.
