Cheese sandwiches can be grilled so that the bread toasts and the cheese melts (a dish referred to as a grilled cheese sandwich, or simply grilled cheese). A grilled cheese is often heated by placing the buttered slices of bread, with the cheese between the slices, on a frying pan or griddle.


Chili Cheese Dog Grilled Cheese Recipe


  • 2 tablespoons butter, cut into three even pieces
  • 1 hot dog, cut into 4 thin slices lengthwise
  • 2 slices hearty white bread, such as Pepperidge Farm or Arnold
  • 2 slices American, Cheddar, or Jack cheese
  • 1/2 cup your favorite chili
  • Kosher salt


  1. Melt one third of butter in a large non-stick skillet over medium heat until foaming subsides. Add hot dog slices and cook, turning occasionally, until browned on all sides. Transfer to a plate. Add both bread slices and cook, swirling occasionally, until pale golden brown on bottom side, about 2 minutes.

  2. Transfer bread to a cutting board toasted-side-up. Place cheese slices on top of each slice. Add hot dogs and chili to one side, then close sandwich, with both toasted sides facing inwards.

  3. Melt one more piece of butter in the skillet and reduce heat to medium low. Add sandwich and cook, swirling occasionally, until deep, even golden brown, about 5 minutes. Remove sandwich using a flexible metal spatula. Add the remaining butter. Return sandwich to skillet cooked-side up. Season with salt. Cook, swirling occasionally, until second side is deep, even golden brown and cheese is thoroughly melted, about 5 minutes. Serve immediately.

Grilled Cheese With Fried Eggs Cooked Into the Bread Recipe


  • 2 slices hearty sandwich bread
  • 2 tablespoons butter (1 ounce; 30g), divided
  • 2 eggs
  • Kosher salt and freshly ground black pepper
  • 2 slices American, cheddar, or Jack cheese


  1. Cut a circle out of the center of each slice of bread using a small empty can or a biscuit cutter. Melt half of butter in a large nonstick skillet over medium heat until foaming subsides. Add both bread slices, break an egg into each, season with salt and pepper, and cook, swirling occasionally, until golden brown on bottom side, about 2 minutes.

  2. Add remaining butter and carefully flip both slices of bread, making sure the eggs don’t break. Add a cheese slice to the top of each bread slice. Cook, swirling pan occasionally, until golden brown on second side. Close sandwich with cheese inside and continue to cook, flipping occasionally, until eggs are soft-cooked and cheese is melted, about 1 minute longer. Serve immediately.

  • 2 slices bread
  • 4 slices cheddar cheese
  • 1-2 slices Lacy Swiss  cheese
  • 4 slices cooked bacon
  • 2 slices tomato
  • 1 tablespoon butter


  1. Spread butter on one side of each slice of bread, then stack buttered sides together. Layer 2 slices cheddar on top of bread stack, then bacon slices, then Lacy Swiss cheese, then tomato and finally the remaining slices of cheese. Place bread buttered side down in a fry pan over medium-high heat. Cover with lid and let cook for 3-4 minutes or until golden.
  2. Reduce heat to medium and flip sandwich to other side and cook for 2-3 minutes or until bread is toasty golden and cheese has melted. The second side will cook faster than the first so watch carefully.

Grilled Cheese Slider Recipe

  • 1½ pounds ground beef (preferably an 80/20 blend)
  • salt and coarse ground pepper
  • 3 slices cheddar cheese
  • 3 slices mozzarella cheese
  • 6 slices white bread
  • 1 can canola cooking spray
  • 12 slices cooked bacon (cut in half)


  1. Prepare grill for medium-high cooking, approximately 400°F.
  2. Gently form ground beef into 12 patties. Season both sides of burger patties liberally with salt and pepper. Set aside until ready to grill.
  3. Sandwich one slice of cheddar and one slice of mozzarella cheese between two slices of bread. Spray the top and bottom of the cheese sandwiches with canola oil and place on the grill. Grill sandwiches for 2–3 minutes per side, gently pressing down on them with a spatula until the bread is golden brown and the cheese has melted. Remove grilled cheese sandwiches from the grill and cut into four squares.
  4. Grill burgers until they reach an internal temperature of 160°F. Place each patty on a grilled cheese section, top with 2 small slices of bacon and another grilled cheese section. Serve immediately.

Grilled Cheese Pizza Sandwich Recipe

This easy to make sandwich is a huge hit on Sunday nights.  Easy to make and  fun way to end the weekend.  Even better with a great soup or salad.


  • Grilled Cheese Pizza Sandwich Recipe8 slices Italian bread
  • 3 tablespoons butter, softened
  • 1/2 cup pizza sauce
  • 8 (3/4-ounce) slices American cheese
  • 1 cup (5 ounces) thinly sliced pepperoni
  • 2 tablespoons chopped fresh basil leaves
  • 2 cups salad greens


  1. Spread 1 side of each bread slice with about 1 teaspoon butter.
  2. Spread 1 tablespoon pizza sauce onto 1 slice bread, buttered-side down. Top with 1 slice cheese, 1/4pepperoni, 1 1/2 teaspoons chopped basil leaves, 1/2 cup salad greens, 1 slice cheese and 1 slice bread, buttered-side up.
  3. Heat 12-inch skillet or griddle over medium heat. Place 2 sandwiches into skillet; cook, turning once, 6-8 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
  4. Place remaining pizza sauce in bowl. Microwave 10-30 seconds or until heated through. Slice each sandwich in half. Serve sandwiches with warm pizza sauce for dipping.

Jalapeño Popper Grilled Cheese Sandwich Recipe

  • 8 jalapeño peppers, halved, seeded
  • 1/3 cup butter
  • 1/4 cup panko bread crumbs
  • 8 slices sourdough sandwich bread
  • 8 (3/4-ounce) slices cheese
  • 2 ounces low-fat cream cheese


    1. Heat oven to 400°F. Line baking sheet with parchment paper.
    2. Place jalapeño peppers onto prepared baking sheet. Bake 30 minutes, turning after 15 minutes. Set aside.
    3. Combine butter and panko bread crumbs in bowl; mix well. Spread 1 side of each bread slice with 2 teaspoons butter mixture.
    4. Evenly spread cream cheese onto unbuttered side of 4 bread slices. Layer each with 4 roasted jalapeño pepper halves and 2 slices cheese. Top with remaining bread slices, buttered-side up.
    5. Heat 12-inch skillet or griddle over medium heat.
    6. Place 2 sandwiches into skillet. Cook, turning once, 4-6 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
