Turkey Borscht Recipe

Here is another option for Thanksgiving (or Christmas) turkey leftovers.


  • 1 turkey carcass
  • 5 cloves
  • 1 teaspoon peppercorns
  • 1 star aniseed
  • 1 bay leaf
  • 4 allspice
  • 1 teaspoon chili flakes 
  • 1/2 teaspoon of Maggi seasoning sauce (optional)
  • one can of tomato soup
  • I handful of fresh dill
  • salt to taste  
  • Add  3/4 cup of brown rice (or use 2 diced potatoes)
  • 1 small bag of ready made cut coleslaw cabbage  
  • 5 diced carrots
  • one can of tomato soup
  • 1 handful of fresh chopped dill


  1. Put turkey carcass in a large pot and then just barely cover it with water.
  2. Bring it to a boil and then simmer it for several hours.
  3. Remove the bones and let them cool a bit and then remove the turkey meat and add that back to the pot.
  4. Wrap spices in cheesecloth and tie it with kitchen string and add it to the pot. 
  5. Simmer for half an hour. 
  6. Add remaining ingredients and simmer for another hour.
